Admitting Defeat

It is time to start retreating and waving the white flag. There is no way I'm going to be able to make my usual tamale dinner for the party we throw for Carl's grad students. I don't have the ingredients. Even if I went shopping tonight or even had the ingredients on hand, I wouldn't have time to cook everything. Carl works all day tomorrow and then has scouts in the evening. Making tamales while alone with Caleb and Eva is not an option. Friday is the party and Carl will be working all day and come home just about 30 minutes before the rest of our guests are due to arrive. I also need to clean the house. And do some more baking for our friends and neighbors treats. And wrap up the presents I made for Caleb's teachers and bus drivers. And finish up some last minute gifts. And wrap all our presents. And keep Caleb and Eva from killing each other (not as easy as you might think).

Oh boy, I'm tired.

I'm thinking a slow cooker recipe is in order. I have to decide soon so I can go and buy everything tonight. Any suggestions? My only limitations are that a few of the students are vegetarians.

Chili?

  1. I'd say a great crock pot recipe...chili, while chili, roast, or even a shredded beef on sandwiches. There is also a Cafe Rio night. I don't know if you've ever been there, but the food is awesome and a Latino flare. You can make shredded pork, chicken. All you need is a few crock pots are you're good to go. All you would need after that are tortillas, cheese, beans, whatever you like on burritos. It's quite good. There is also an awesome cilantro, green chili rice that goes with it. Let me know if you need the recipe.

  2. ok, I just read the vegetarian part. They could always do vegetarian burritos. Sorry, that is a tough one....good luck:)

  3. Maybe some kind of taco/burrito bar? You could have taco shells, flour tortillas, cheese, chicken, beef, refried beans, salsa, guacamole, sour cream, lettuce and tomato. The students could make their own and that way the vegetarians could make what they like and the carnivores can have theirs the way they like. :) It sounds like a lot of dishes, but we have done this before for parties and it turns out great!

  4. Yeah, how about your lime/cilantro rice on tortilla's with a salsa, avacados, etc. Then you could do a chicken or beef in the crock pot and just shred it up. yum. Oh, and invite me (like you need another body to feed. . )

    I didn't read if your food had to be Mexican, but if you've got vegans coming, sometimes, quiche is an option. You can make some quiche w/meat or others w/o meat and broccoli..spinach...etc.

  6. My suggestion would be the old pampered chef ....touchdown taco dip/layered.... Refried beans....sour cream and cream cheese with taco seasoning....cheddar cheese bake at 350 for 17 minutes to melt the cheese and top with lettuce, tomato,green onions and olives. A big bowl of chips and salsa.

    My sister in law also makes these great appetizers with a tortilla

    mixture inside cream cheese stir in salsa and sprinked with cheese roll and then slice like pinwheels :)

    Have a great time... You could also find a mexican market with tamalaes to go!!!
